I met Carol at a cooking class in August of 2009. She was trying to learn how to eat healthier. She had seen a kidney specialist earlier in the week and had learned that her kidney disease diagnosed seven years earlier had now progressed to Stage 4 ("severe"). Dialysis would be next. Consulting a gastroenterologist, he told her to refrain from eating beef, chicken, fish, and dairy, and to eat fruit, vegetables, beans, and whole grains. Carol had been hypertensive (on three meds) and a diabetic for 23 years (on 63 units of insulin), all of which added big time stress to her kidneys. I could see she was clearly motivated to make the changes needed and suggested she attend the next 16-session CHIP wellness program, which is what she did.
Carol didn't miss a class. Enthusiastic and desperate, she began making simple lifestyle changes. By doing so, she learned that many of her diseases may be slowed down, stopped, and even reversed.
And that's just what happened. By the end of the five week CHIP Program, Carol’s health had dramatically improved. She saw her kidney doctor and the tests showed improved kidney function. Her diabetes was better making it necessary for her physician to lower the insulin form 63 to 47 units. Her blood pressure was now ideal even though her drugs had been cut in half. And she had lost 13 pounds of extra weight.
Next, a year later, at age 77, Carol is back on track with a new lease on life. “My kidneys are doing so much better now. My insulin has been cut again. I'm only taking 9 units now. My blood pressure is holding, and I've lost another 24 pounds of extra weight. I feel so much better now. I couldn’t have done this without CHIP. CHIP taught me what I needed to do to regain my health, and I have resumed activities I haven’t been able to do for years.”
